Paul Richards’ Book of Breads, Cakes, Pastries, Ices and Sweetmeats Especially Adapted for Hotel and Catering Trades, 1907, Second Edition, or Paul Richards’ Pastry Book.  Large, hard backed cookbook with linen-covered, nicely embossed boards.  Published by The Hotel Monthly, Chicago, in 1907.  168 pages, plus advertisements for more Hotel Monthly publications.  This book is in excellent antique condition.  Hinges are good, binding is perfect, pages are uniformly tanned.  All are clean and clear.

This is a no-nonsense cookbook with tightly spaced lists of recipes that are presented as striped-down formulas.  Part I is fruit jellies and preserves.  Part II is pastry and pie making.  III is cake baking.  IV is puddings and sauces.  Part V is ice creams, ices, punches, etc. VI is breads, rolls, buns, etc. and Part VII is candy making, plus a fascinating caterers’ price list.
