Girardet owns the Restaurant Girardet in the hotel de ville of Crissier, Switzerland. These recipes are elegant, prepared from the freshest–and often very expensive–ingredients. The recipes themselves are exceedingly precise, with Girardet telling the reader exactly how to slice a vegetable, and exactly the ingredient to use, down to exactly the right fish.
