Culinary Handbook, Charles Fellows, 1904, First Edition, First Printing: Alphabetical, encyclopedia-style culinary reference book written by Charles Fellows and published by the Hotel Monthly Press, John Willy, Inc., Chicago, in 1904. So, the contents range from Absinthe to Woodcock. Hardcover book with red linen covered boards. 186 pages plus blank pages for recipes and two pages of advertising for the John Willy catalogue. This cookbook is in excellent antique condition. The cover has shelf wear, with worn corners and edges. Binding is tight and strong. Pages are completely clean and clear.

Cookbook contains brief definitions of ingredients, techniques, equipment, and specific dishes. Definitions often include quick and dirty recipes for many of the dishes, recipes that an accomplished cook could probably follow. For example, “SAVORY CANAPES–Strips of toast spread with a mixture of grated ham, cheese and scrambled eggs, the edges decorated with lobster coral.”
