Description
Kosher Cajun Cookbook, 1987, First Edition, First Printing: Cookbook by Mildred L. Covert and Sylvia P. Gerson. Published in 1987 by Pelican Publishing Company, Gretna, Louisiana, in 1987. Hard cover with dust jacket. 254 pages. Dust jacket has some dings. Book is in mint condition.
Arranged as a tour of the Acadian country of south Louisiana, with certain areas getting assigned recipes for certain types of foods. For example, Lake Charles gets the vegetable recipes. Crowley gets rice. Morgan City gets seafood. Lucky New Iberia gets sauces and seasonings. There’s a special section on the Jewish feast of Purim.
I get the biggest kick out of this cookbook, mainly because of the illustrations by Alan Gerson. They are always good, often sweet and very often funny. Also, you have to smile at the notion of these two brave women gamely and successfully combining two distinct food traditions.
