Gitty’s Exotic Cooker, 1978, Gitty Ilami Collins, Rare Middle Eastern Recipes: Difficult-to-find cookbook written by Gitty Ilami Collins and self-published in 1978 via G & G Publications, Ocala, Florida. This copy is from the first edition, first printing. Paper cover and plastic comb binding. 207 pages. Cover has quite a bit of shelf wear. Pages are completely clean and clear.
Gitty’s Exotic Cooker includes Soups (chicken, beef or lamb, and meatless soups,) Salads, Side Dishes (dolmeha, quiche, and vegetables,) and Main Courses (stews, rice, meats, fowl, and fish.) Many of the main course dishes are spiced with saffron, and the author includes a lesson on preparing saffron for use. Besides being a gourmet cook, Ilami was a Middle Eastern professional dancer and dance teacher. Apparently, the sketch on the cover of the book is a sketch of the author.
