Cream Puffs Recipe Used in the South

Cream Puffs Recipe from Book of Famous Old New Orleans Recipes Used in the South for more than 200 Years with Glassine Dust Jacket:

Cream Puff Recipe from Blue Ribbon and Pure Gold Cook Book, 1905, For Everyday Use in Canadian Homes

I love the last sentence: “This recipe never fails, if followed carefully.” Nothing better than a recipe with a guarantee!

Of course we have the book. See it here: Book of Famous Old New Orleans Recipes Used in the South for more than 200 Years

Book of Famous Old New Orleans Recipes Used in the South for more than 200 Years: This cookbook was published by the Peerless Publishing Co., New Orleans, Louisiana. (This copy does not have a copyright date, but the copy on-line digitized from the Harvard says copyright 1900. It also says, “Printed for the Free French Movement, 633 Royal Street, New Orleans.) The semi-transparent cover says, “Over 300 Authentic New Orleans Creole Recipes Used by Good Cooks for Something Different.” Paper cover with plastic comb binding. 57 pages plus index and advertising. The glassine dust jacket has ragged top and bottom edges. The book cover is lightly tanned at the top and bottom edges. The pages are all perfect. The comb binding is perfect. The very difficult-to-find dust jacket makes this book highly collectible.

The book has an excellent forward with superb cooking tips, including a very useful description of how to make a roux. Includes beverages like Creole Coffee and Cherry Bounce, plus soups, eggs and entrees, meat and poultry, vegetables, salads, and desserts. It also has lovely pen and ink illustrations, along with brief historical discussions. However, it does not have an author’s name.
