Favorite Dishes: A Columbian Autograph Souvenir Cookery Book, 1893: Hard cover copy of a distinguished cookbook with over 300 recipes by well known Chicago women and compiled by Carrie V. SHUMAN, FAVORITE DISHES: A COLUMBIAN AUTOGRAPH SOUVENIR COOKERY BOOK. Publishes in 1893, second edition. Illustrated by May ROOT-KERN, Mellie INGELS JULIAN, Louis BRAUNHOLD, and George WHARTON EDWARDS. Chicago: 221 pp. Cover is mustard yellow cloth stamped in gilt and white. Corners and spine bumped, worn; cloth soiled. Hinges cracked. Light soil and foxing to endpapers. Inside, the pages are mainly in excellent condition, with a few spots. The binding is in fine condition, tight and clean. It has black and white illustrations, many of them reproductions of charming pen and ink drawings, Recipes are “signed” with an autograph facsimile of the creator. There are sepia toned photo reproduction portraits of some of the women, including Mrs. Palmer (frontispiece.) The introduction, presumably by Shuman, is a fascinating discussion of “exotic” ingredients, including tea, chocolate, cocoa, and coffee. She quotes Filippini’s for “Black Coffee.”

The back pages include hand written recipes for salmon log, ginger cookies, sugar cookies, hickory nut cake, creamed veal, apple sauce cake, carrot pudding, and more. The back hinge is split and the pages are very spotted. The chapters, including the names of the women submitting the recipes, are for bread, soup, fish, shell fish sauces, meats, sweetbreads, poultry, game, vegetables, eggs, salad, doughnuts and fritters, preserves, pickles and catsup, cheese, pies, pudding, cake (lots of recipes,) cookies, desserts, ice cream, candy, punch, beverages, and chafing dish recipes.
