Pacific Island Cookbook, 1994, Product of AIMS, University of Hawai’i: This cookbook was the result of a project run by the Institutuions of the Pacific. Funded through the U.S. Department of Agriculture CooperativeOne of the delights of the cookbook State Research Service. It was compiled by Michael T. Harrington. Nutrition Work Team Participants were included. This cookbook has a reinforced paper cover and a plastic comb binding. It has 160 absolutely clean and clear pages with recipes that include estimated nutritional values. Each chapter also includes detailed information about the ingredients used. One of the delights of this cookbook is its use of ingredients you may never have used before, like cassava root, taro,and breadfruit. The cookbook is in absolutely mint condition. Never used.

Perhaps they didn’t print many copies, because this is a very difficult cookbook to locate.
