Theriot begins with a short history of the Cajun tradition and “validates” his history as a Cajun chef by providing his family’s history. He provides recipes for gumbos, soups, salads, seafood, poultry, meats, vegetables, sauces and dressing, and sweets. There’s an important chapter on seasoning mixes. Every recipe has a Lagniappe note or a “something extra” note with tips about freezing, storing and/or serving the dish. These notes let Theriot’s personality shine through.
