Description
Vachon’s Economical Soups and Entrees, 1903, Joseph Vachon: Slim , thin volume published by the Hotel Monthly Press, Chicago, Illinois. Dark green pebbled leather cover. 35 pages of very thin paper with very tiny print, all completely clean and clear, plus eight pages of descriptions of other cooking-related books. (lists like these are very useful if you are trying to compile a vintage collection.) Binding is firm. Hinges are perfect, There’s modest wear on the corners and edges.
I’ve read that head waiters kept these books in their jacket pockets, in case they needed a recipe for a dish for a special client.
