Institutional Recipes of Authoritative Origin, Second Sexton Cook Book, 1941, First Edition, First Printing:  Cookbook composed for “the Sexton Market,” the organizations served by John Sexton Co., Manufacturing Wholesale Grocers.  The Sexton Company sold to cafeterias, camps, clubs, coffee shops, colleges, convents, country clubs, department store cafes, fraternities, hospitals, hotels, orphanages, prep schools, railroad diners, resort hotels, restaurants, school cafeterias, soda fountains, sororities, steamship lines, tea rooms, and universities.

This is a comprehensive cookbook with an interesting feature:  the recipes vary widely in the number of servings produced.  Some of the recipes serve 100 people.  Some of them serve two.  Many of them serve 50.

Hardback book with 416 pages.  Good vintage condition.  The hinges, both front and back, have been reinforced with clear librarian’s tape.  Cover has shelf wear.  Pages are clean and clear.
