Reflections of an African American Kitchen, 1984, with Soul Food Recipes:  Cookbook written by Frances M. Hassell, Vice President of the Communications Department of Universal Life Insurance Company, Memphis, Tennessee.  Published by Hassell House Publishing, Mempis, Tennessee, in 1984.  Cardboard cover with plastic comb binding.  190 pages.  This cookbook is in nearly new condition.  Some very slight shelf wear on the cover.  Pages are completely clean and clear.  Binding is perfect.

Hassell writes:  “Soul Food may be considered as both a method of cooking and/or specific types of food.  The “something extra” added to the traditional Southern recipe–something blacks have labeled ‘soul’–places their food in a distinctive category all their own.”
