Recipes from Walter’s Original Delice, Signed by Author, Post 2006: Recipes from pastry chef Walter Huber, who opened his shop in Aspen in 1957, then moved it to Glenwood Springs in 1978. The shop and restaurant closed in 2006, with Huber saying he was going to write a cookbook. I assume this is it. This cookbook has an embossed paper cover, plastic comb binding, and about 40 pages. The cover has a bit of shelf wear. Pages are all clean and clear. It begins with recipe and instructions for making puffpaste. Then, there are recipes using puff paste, including recipes like Filet Wellington. There are also recipes for cookies and pastries with puffpaste, plus recipes for fine desserts, breads and rolls, tortes, and “A Few Cookies.”
Huber’s daughter, Cynthia Vodopich, published Delice of Aspen in Glenwood Springs in 2008, a slicker book with lovely photography.
