Larousse Gastronomique: The Encyclopedia of Food, Wine and Cookery by Prosper Montagne, with the aid of Auguste Escoffier. Published by Crown Publishers, Inc., New York. 1961 English translation. A beautiful cookbook, with many full-color illustrations, lovely line drawings, and historical prints. Beautifully constructed, as well. Printed on clay-coated paper, with a sturdy binding and cloth cover. 1101 pages. The dust jacket has lots of shop wear, but this book is in near-fine condition. First few pages are wrinkly. I don’t think anyone ever really used it.
