The recipes here were developed by individual chefs at various Hilton Hotels around the world. As Conrad N. Hilton says in his introduction, “[t]he chefs who rule the kitchens ranging all the way from Beverly Hills, California, eastward to Istanbul, Turkey, are the actual authors of this book.” However, the names of the chefs aren’t provided. There’s no editor listed, either. The recipes are arranged by courses and by ingredients, so, by appetizers, soups, poultry and game, meats, fish, vegetables, covered dishes, eggs, rice, and pasta, salads, sandwiches, desserts, and basic sauces.
