French Laundry Cookbook, 1999, Keller, As-If-New Condition

French Laundry Cookbook, 1999, Thomas Keller, As-If-New Condition: Huge, stunning, coffee- table-book style cookbook with absolutely sensuous food photography. Thomas Keller, Susan Keller, and Michael Ruhlman wrote the text. Photographs by Deborah Jones. Published in 1999 by Artisan, New York. Hard cover book with dust jacket, both in as-if-new condition. 325 clay-coated pages. This copy is from the twelfth edition.

Everything about this cookbook is unorthodox. The chapters have titles like “The Law of Diminishing Return,” “Tools of Refinement: The Chinois and Tamis,” and “Importance of Staff Meal,” not to mention, “The Importance of Offal.” The unorthodox aspects are refreshing and enlightening, actually. For example, this cookbook teaches the reader a great deal the use of kitchen equipment, how specific types of equipment produce specific results.
