Everything about this cookbook is unorthodox. The chapters have titles like “The Law of Diminishing Return,” “Tools of Refinement: The Chinois and Tamis,” and “Importance of Staff Meal,” not to mention, “The Importance of Offal.” The unorthodox aspects are refreshing and enlightening, actually. For example, this cookbook teaches the reader a great deal the use of kitchen equipment, how specific types of equipment produce specific results.
