Rather scholarly treatment of cooking and recipes, with lots of charts and tables and lists. For example, Allen-Gray lists all the countries she treats (mainly European,) along with each country’s idiosyncratic foods. There’s a chapter on “Herbs and Spices; Flours; Wines in Cooking, and Beverage Wines,” that is also very informative. Other chapters include homemade beverages; hour d’oeuvre; soups; fish; barbecues; meat; casseroles; poultry; dumplings and pastas; eggs, cheese and milk dishes; vegetables; salads; pickles; desserts; breads; biscuits; cakes, tortes and icings; pies, tarts, pastries.
