Culinary Arts Institute Encyclopedic Cookbook:  New, Revised Deluxe Edition of the Culinary Arts Institute Encyclopedic Cookbook, first published in 1948.  This New, Revised, Deluxe Edition was published in 1966.  Edited by Ruth Berolzheimer.  Published by Culinary Arts Institute, Chicago, and distributed by Grosset & Dunlap, New York.  This is a huge–even though it is relatively compact–cookbook of 974 pages, plus a 66 page index.  Hard cover, with the white boards and deckle page edges that make it deluxe.  Thumb indexed (a luxurious feature no books except the Bible even have anymore.)  Near mint condition.  The cover has some shelf wear, but the pages and binding are mint.  This cookbook was never really used.
