Chef’s Book of Formulas, Yields, and Sizes is an extremely dry book of formulas with weights and measurements and yields of all kinds of foods and beverages, all arranged in alphabetical order. For example, in one keg of beer there are schooner-sized 293 servings if you pour using a 1/2″ head. There are 265 servings if you use a 10 ounce paper cup. A serving size of canned cherries made into dessert sauce is 2 ounces. One #10 can of cherries yields 30 servings. The charts also have calorie counts: one serving of canned cherry dessert sauce has 105 calories.
