Allman developed most of these recipes when she and her husband were starting Tongass Lodge, Excursion Inlet, for fly-in, boat-in hunters and fishermen. At the time of publication, she was chef and curator of the House of Wickersham in Juneau where a specialty is “flaming sourdough.”
