Jackson Cookbook, Symphony League of Jackson, Mississippi, 1971, 1973: Another one of those cookbooks that has taken a life of its own. The Jackson Cookbook, compiled by the Symphony League of Jackson, Mississippi, was published in support of the Jackson Symphony Orchestra. The cookbook committee had the extraordinary good fortune to have Eudora Welty write the introduction to this cookbook, since Jackson was her hometown.

The cookbook opens with a recipe developed by Winifred Green Cheney in honor of Welty, Squash Eudora. (You can see it in our Antique Recipes section, at the top of our home page.)

This copy of the Jackson Cookbook was printed in 1973. It is in as-if-new condition, just like you pulled it off the shelf at Barnes and Noble.
