Here’s one great recipe from Doris Muscatine’s Cook’s Tour of Rome:

Of course we have the cookbook.  See it here:

Cook’s Tour of Rome: Best Roman Food and Where to Find It, 1964: Book written by Doris Muscatine and published in 1964 by Charles Scribner’s Sons, New York. Illustrated by Carolyn Cather. Presumed first edition, first printing, no other being mentioned. Hard cover book with dust jacket. 369 pages. Dust jacket has priced clipped, but is in great shape otherwise. Book is in mint condition.

After an introduction, maps showing the restaurants of Rome and the wines of Italy, this charming book discusses the restaurants of Rome and provides several recipes from each restaurant. Muscatine writes with a chatty, conversational tone. She obviously became acquainted with all the prominent restaurant people in Rome, and she includes lots of local information about people and places, along with photographs.
