Cook Book by “Oscar” of the Waldorf: Huge, very difficult to find cookbook by Oscar Tschirky, Maitre d’ Hotel, The Waldorf. Published in 1896 by The Werner Company, Chicago and New York. First edition, presumed first printing. Photo of Tschirky at the front, still with its tissue paper guard. Hard cover with 907 pages. The cover has quite a bit of shelf wear, and the spine cover is worn. Inside, the hinges are completely broken; the book is completely separate from the cover. The binding, however, is in excellent condition, and, while the pages are lightly tanned at the edges, the pages are all completely clean and clear! This cookbook has never been really read or used. (These images are a little curved because I was being very careful of the binding.)
Justifiably famous, the Cook Book by Oscar has many notable features. It opens with “A few Suggestions with Regard to the Kitchen,” has comments on “Menus, or Bills of Fare,” has an extensive list of seasons in which certain items are available, plus an extensive suggested market list for meats and fish. Then, of course, there are hundreds–if not thousands–of elegant recipes for every dish you can imagine.
