Larose is in the part of southern Louisiana called Cajun Country. The introduction to the cookbook explains how the farmers and fishermen in Larose depended on caboteurs, or trading boats, who made regularly schedule stops at wharves on the bayou between Donaldson and Leeville. Their Cajun food was the result of the mingling of these cultures.
